This is a super easy and really delicious meal - not very costly either!
3-6lb Pork Roast (or shoulder or butt)
Store Bought Porl Rub (Which I add a tablespoon of brown sugar and some paprika to)
or you can make your own
Spice Rub:
1 tablespoon ground black pepper
1-2 teaspoons cayenne pepper
2 tablespoons chili powder
2 tablespoons ground cumin
2 tablespoons dark brown sugar
1 tablespoon dried oregano
4 tablespoons paprika
2 tablespoons table salt
1 tablespoon granulated sugar
1 tablespoon ground white pepper
1/4 cup water
1/2 tsp liquid smoke
1 jar really good BBQ sauce

1 jar really good BBQ sauce
- 3 to 48 hrs prior (the longer the better for flavor)
- Trim the excess fat off the pork
- Generously rub the pork with the seasoning rub - make sure to get everywhere
- Wrap the pork tightly in plastic wrap ( I wrap it twice) and put it in the fridge
- Place the water and liquid smoke in a crockpot
- Unwrap the pork and add it to the crockpot and cover
- Cook on low for 8 to 10 hours
- Approx 30-60 mins before you want to eat take 2 forks and shred the pork
- You can now serve it with the bbq sauce on the side (that is how I like it) OR
- Pour the bbq sauce in and let it cook for a while longer - This way is yummy but not the prettiest
