Salmon with a Lime and Honey Glaze

Lime- and Honey-Glazed Salmon

*This recipe originally had more to it but this preparation is much quicker and easier

We serve this with Basmati rice that has been cooked in chicken stock - awesome!







Ingredients

  • 1/4 cup fresh lime juice
  • 2 tablespoons finely grated lime peel
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh cilantro plus additional for sprinkling - We did not use this as we don't like Cilantro
  • 4 teaspoons soy sauce
  • 4 5-to 6-ounce skinless salmon fillets (This is easily changed depending on your needs)

Preparation

Preheat oven to 400°F. Whisk lime juice, lime peel, honey, 2 tablespoons cilantro, and soy sauce in small bowl; set aside. Spoon at least 1 tablespoon lime mixture over each salmon fillet. * Make sure spoon does not touch the raw fish as you will use the remaining mixture.  Bake until salmon is just opaque in the center
Drizzle remaining lime mixture over cooked fish ; sprinkle with additional chopped cilantro and serve.
